Chia seeds aren’t just for making your Obama Chia head grow nice and green, but they are also a very healthy seed to eat. You can buy the seeds at any supermarket (they are usually in the specialty flour isle). These seeds are high in protein, omega-3 oils, and anti-oxidants. They also double in size in your stomach, so they make you feel full. If you are looking for a high energy midday snack, you should check out this recipe. It only takes about 15 minutes to make, you don’t have to bake them, and it is relatively inexpensive for the amount of nutrients and energy you get from them. The cost for 10 cookies is around $3-5 depending on the quality of the ingredients – compared to $3 for a pre-made bar with equivalent ingredients.

  • 1 Cup coconut flakes
  • 1/2 cup chia seeds
  • 1/2 cup toasted buckwheat (you can substitute any nut or seed if you cant find)
  • 1/2 cup hazelnuts or almonds
  • 1/2 cup cranberries
  • 1/2 cup raisens
  • 1/2 cup sesame seeds
  • 1/2 cup peanut butter
  • 1/4 cup honey
  • 3 tablespoons molasses
  1. In a food processor, blend dry ingredients.
  2. Add wet ingredients and blend until everything is incorporated.
  3. Adjust recipe depending on how sticky or loose the mixture is. You want it to hold together, but not be too sticky.
  4. Make little cookies shapes and put in fridge to set.

  1. Just pinned this to my list of recipes to try, they look like a good no-bake alternative to energy bars. I’ll have to use almond butter since I can’t have peanuts, and get some chia seeds (for some reason I haven’t tried those yet).
